I just spend a really wonderful weekend in Chicago with my husband and 3 other couples. We tried some new restaurants. We went to an outdoor concert to see the Gypsy Kings at Ravinia Park. I love checking out the food scene in different cities and I’m sure you know, Chicago has an amazing one. However, I was determined this trip to stay healthy and on track with my goal to eat 80% raw. I’m pleased to say, I was able to stay on target. Actually, it wasn’t that hard. We found a great juice bar within walking distance of the hotel. I practiced my rule of eating a healthy item before going for the unhealthy choice and didn’t limit myself. However, every time I chose the healthy item first, it squashed my craving for original unhealthy item I wanted.
I have found, for me, eating about 80% raw works best. I have experimented with every eating plan you can imagine. I’ve gone vegan, vegetarian, pescatarian, fruitarian and even 100% raw. However, I didn’t always feel great on any of these ways of eating. I believe, everyone is different and for some people, being 100% raw or vegan or vegetarian works great for them. I believe my optimal plan is 80% raw with some cooked food sprinkled in.
One of the reasons I like eating this way is I notice an increase in my energy level. I sleep better. My skin looks better and I just feel better.
Raw food contains digestive enzymes we need. When food is cooked, it loses the digestive enzymes and your body has to work harder to digest the food. However, if you can add some raw food to every meal, like fresh vegetables, your body will not have to work as hard, which means more energy for you. Plus, did you know, you actually need energy to sleep. If your body is using up all it’s energy to digest the cooked food you’ve eaten, you will not sleep as well.
I’ve put together a 1 day 80% raw plan for you that has some of my favorite foods. If you’re feeling low in energy, try this plan for a few days and see how you feel.
80% Raw Day Sample
Green Smoothie 100% Raw
1/2 lemon peeled
1 cup spinach or kale
1/2 green apple
1 cup coconut water
dash of salt
Blend and enjoy!
TIP: Double the recipe and store the 2nd one in the refrigerator in a mason jar with a tight lid and have this as an afternoon snack.
Mid AM Snack:
Lunch 100% Raw
I like to have a very large raw salad for lunch with a mix of vegetables or I love to have a batch of guacamole and fresh vegetables to dip it with. Sometimes, I’ll make a lettuce wrap of guacamole and vegetables.
Mid Afternoon Snack:
2nd smoothie made from earlier in the day.
Red Curry Vegetable Soup
1 shallot chopped
2 tbsp red curry paste
1 cup coconut milk
1 cup stock of choice
1 cup chopped and peeled potatoes
1 cup green beans
1 cup broccoli
juice of 2 limes
2 tbsp cilantro
Add a tbsp of coconut oil to large pan and sauté shallots until tender. Then add the red curry paste until well mixed. Add coconut milk and stock and allow to simmer a few minutes. Add dash of salt. Next, add all the vegetables and allow to simmer until tender. Just before serving, add lime juice, cilantro and chopped scallions on top.
