I admit I like potato chips, however I don’t like the unhealthy aspects of most potato chips. I love finding a healthy alternative to unhealthy foods. This is my healthy alternative to the traditional potato chip. I’ve seen lots of recipes where you slice the sweet potato into thin round chips.
I tried this and then thought, what if I used a vegetable peeler and made the chips even thinner. Turns out, this works great.
Step 1, I used my vegetable peeler and sliced an entire sweet potato into thin strips.
Preheat oven to 375 degrees.
Next, I added a little extra virgin olive oil, generous amount of salt and pepper. Then I laid each strip onto a baking rack and baked for 10 minutes.
Last, remove from oven and place on parchment paper or paper towel to cool. I absolutely LOVED these and it completely quenches any craving for potato chips.
1 large sweet potato
Extra virgin olive oil
Salt and pepper
Using a vegetable peeler, peel strips of the sweet potato. Preheat oven to 375 degrees. Next, season with olive oil, salt & pepper. Lay each sweet potato strip onto a baking sheet in a single layer and bake for 10 minutes or until each chip begin to look crisp and edges begin to brown. Remove from the oven and place each strip on a cooling rack or layer of paper towels.
