< These look so much more complicated than they are. 1 carrot grated 1/2 english cucumber cut into small squares 1 avocado cut into small chunks 1 small tomato chopped into small pieces 1/4 red onion chopped into small pieces 3 teaspoons olive oil 1 teaspoon balsamic vinegar salt & pepper 1 garlic clove minced 1/4 teaspoon dried oregano cilantro for garnish Equipment needed: Small size ring mold Directions:
1st: Prepare carrots, cucumber, tomato, onion & avocado and set aside.
2nd: Prepare dressing by mixing vinegar, olive oil, garlic, oregano, salt and pepper in a small bowl and blend to emulsify.
3rd: Place each vegetable in a separate bowl and drizzle dressing over each, mix to combine dressing.
4th: Begin to ensemble the molds by placing the ring mold on a flat plate, first add in a layer of shredded seasoned cucumber, next top with chopped seasoned cucumber then avocado, tomatoes and onion. You can alter the layers until you fill the ring mold. Press the mix firmly and gently remove the ring mold. You can top each small tower with fresh cilantro or more chopped tomatoes.
